meat-free monday: spaghetti for all seasons

It is weather for ducks today...
ten days to go until the longest day of the year, mid-summer, and I just turned the heating on.
So, it's a little hard to be inspired about summer time living when it's tipping it down outside.
It's all very well when it's this miserable in February, but for it to do this in June is unacceptable. Needless to say, it's been a bit tricky to find anything other than coffee & cake for today's post.
Luckily I have a couple of trusted places to visit for inspiration - I think part of it is in the beautiful styling and photography, but I'm always excited by what I find over at Drizzle & Dip:
Sam's lemony spinach carbonara makes a clever vegetarian alternative to the standard carbonara involving loads of pancetta, but still looks hearty and welcoming on a wet evening like tonight. And I can imagine it working equally well under sunny skies, served with a glass of crisp white Sauv Blanc.

If you're lucky enough to live like that, let me know how that works out for you.
In the meantime, I'll be wearing my winter jammies trying to figure out why we have a hosepipe ban in Britain.
