meat-free monday: easy,peasy edamame

Hulled edamame are fast turning into my go-to ingredient in any salad. They are guaranteed to fill you up, making a salad much more filling, as well as apparently being the only food to provide all nine amino acids, and packing a powerful punch in protein to carbs ratio and a way to get your daily dose of fibre. 

That's interesting, but really, round here it's all about ease - and these are easy, peasy, lemon squeezy: boil 'em for a couple minutes, with good salt. Eat them hot, or cold. Done.
