meat-free monday: plenty of inspiration

I'm starting to work my way through my list of 101 things, but haven't quite got to choosing some recipes to master from my cookbooks...I read them more like novels. Or food porn.
So it's ridiculous that I want a new cookbook, but having seen some images from Yotam Ottolenghi's Plenty, I am *desperate* to own it.

Ottolenghi isn't vege at all, but he has written a book of 120 vegetarian recipes after his long running column - the New Vegetarian -in the Guardian. I love his philosophy towards food in general, and we share our approach to vegetarianism - I eat meat , but sometimes I prefer not to.
Sometimes it's because I don't fancy it, but mainly it's because vegetarian food can be so beautiful and I'm a sucker for a pretty plate - and Ottolenghi is the master of proving that:

green bean salad with mustard seeds and tarragon

figs with basil, pomegranate vinaigrette, goat's cheese
avo, quinoa and fava bean salad
happy healthy Monday!
