meat-free monday: winter caprese salad

Tonight I'm rocking avo, grilled cherry tomatoes and halloumi and calling it a winter caprese salad. I thought I invented it. I was so excited - and then google said I hadn't.
Rather, google said it had been done before.
The good news is it has been done by weight watchers...

And apparently if you use
25g of halloumi, 5 cherry tomatoes, 1 avo, and a handful of salad leaves,
along with 1/4 of the dressing made from:
2 tbs olive oil, 2 tsp dijon mustard, 2 tsp lemon juice, 1 clove of garlic and the zest of one lemon (zest is a great word, by the way)

THEN you have eaten 7 weight watchers pro-points worth of food.
I don't really know what that means.
(But I also don't really plan on zesting a lemon, using garlic or weighing my halloumi.)

Here's what I do know:

Sweden eat the most amount of halloumi, after Cyprus.
(even before Greece)

Not all garden gnomes are bad.

Particularly if they live inside and are gold.

see you tomorrow,

ps. If you were considering it - I don't want a gold gnome for Christmas - they are for Other People's Houses, much like barcelona or tulip chairs. Fact.
