meat-free monday: the greek files

I am *always* on the lookout for clever ways to eat spinach.
I hated it as a kid, but now quite like it when its cooked any way other than my mother cooked it (boiled to buggery). It's also so good for you. 

Not really sure how good it is in this recipe from Closet Cooking (another pinterest find!) since the other ingredient is cheese!  But it's a nice change from spinach and feta muffins which are only good for mid-morning tea, whereas this is great for a light supper. Better yet, it's a five-step recipe, which suits lazy me, who is all about the food and not so much about the admin!

This is for dinner tonight then - served with ripe tomato & onion salad, and maybe a glass of white wine.
