meat-free monday: muffin stuffing

I feel quite bad about subjecting you to
a two-minute Microwave rice meal last week,
even though it is *delicious*,
and I'm claiming temporary insanity 
due to the fever that was trying to kill me.

I'm going to try to sweeten you up to apologise - 

these my friends, are delicious.

And meat-free.

And although supposedly not a meal in themselves, they're pretty damn moreish and I bet you won't need dinner.

30 Day Muffins

Beat 2 eggs
Add ½ cup cooking oil & 2 cups milk

Then add all of this: 
2 ½ teaspoons bicarb
1 teaspoon salt
1 ½ cups flour
2 handfuls raisins
1 teaspoon vanilla
2 cups digestive bran
1 small packet chopped dates 
to those eggs,oil and milk.

(Yip, that's right - NO SUGAR!)

rather than shitty old plastic ones.

These are to *die* for! I covet them.
Actually, they're really the reason I chose to use this recipe for today's 
Meat-Free Monday.

 Keep in the fridge overnight before baking at 180 degrees for 15 minutes or until golden brown

They're called 30 Day Muffins
because that's how long the mixture will last if you freeze it.
If you do, you're weird,
since they're so good you'll want them all now!

instead of dates you can add tinned apple or grated carrot,
although I think that's gross, and would suggest nuts.
